Cryovac® CNT-100 Series Color Transfer Cook-In casings are barrier
cook-in casings with a smoke color and/or flavor coating on the inside.
As the product is cooked, the coating transfers to the surface of the product. This means that products with a smoked appearance can now be cooked, chilled, stored and transported in the same package without concern or microbial cross-contamination. Also, shelf life is significantly extended compared to products made in fibrous coatings.
- Vastly improved shelf life of product cooked in CNT-100 casings allows processors greater scheduling flexibility.
- Product is protected from post-cook contamination, meaning that processors can safely store cooked bags or ship them between plants. Product handling is reduced since secondary smoking processes are eliminated.
- Evaporative moisture loss is eliminated; therefore cook cycles can be accelerated without losing yield.
- Reduced level of breakage in stuffing and cooking is realized, increasing product yield.
